  • 150 gricotta
  • 100 gcooked ham
  • 40 gParmesan grated
  • 30 gbutter
  • 8 wholefresh sage leaves
  • 2 gsea salt

  • 150 g ricotta
  • 100 g cooked ham
  • 40 g Parmesan grated
  • 30 g butter
  • 8 whole fresh sage leaves
  • 2 g sea salt

Instructions

  1. Make pasta dough with flour and eggs; rest 30 min.
  2. Mix ricotta, diced ham, and Parmesan for filling.
  3. Roll dough thin; cut circles; fill and seal into rounds.
  4. Cook in boiling salted water 4 min.
  5. Brown butter with sage until nutty.
  6. Toss sorrentinos in sage butter; serve with extra Parmesan.
