  • 400 gchicken breast
  • 8 unitscorn tortillas
  • 5 unitsguajillo chiles
  • 300 gtomatoes
  • 3 clovesgarlic
  • 100 gonion
  • 4 unitseggs
  • 100 gOaxacan cheese
  • 80 mlMexican cream
  • 500 mlvegetable oil

Ingredients

  • 400 g chicken breast
  • 8 units corn tortillas
  • 5 units guajillo chiles
  • 300 g tomatoes
  • 3 cloves garlic
  • 100 g onion
  • 4 units eggs
  • 100 g Oaxacan cheese
  • 80 ml Mexican cream
  • 500 ml vegetable oil

Instructions

  1. Cut tortillas into triangles, fry until crispy in hot oil.
  2. Toast and soak guajillo chiles, blend with tomato, garlic and onion.
  3. Fry sauce in 2 tbsp oil until reduced.
  4. Boil and shred chicken.
  5. Add crispy tortilla chips to sauce, cook briefly until softened but not soggy.
  6. Add shredded chicken, top with fried egg, cream and cheese.
