Beef Tenderloin Salad with Horseradish

Seared beef tenderloin over peppery rocket with horseradish cream and capers. A sophisticated British salad with 40g protein per serving. Elegant and satisfying.

Ingredients

  • 350 gbeef tenderloin
  • 100 grocket
  • 2 tbsphorseradish sauce
  • 3 tbspGreek yoghurt
  • 1 tbspcapers
  • 20 gParmesan shavings
  • 100 gcherry tomatoes
  • 1 tbsplemon juice
  • 1 tbspolive oil
  • 0.5 tspDijon mustard
  • 1black pepper

Ingredients

  • 350 g beef tenderloin
  • 100 g rocket
  • 2 tbsp horseradish sauce
  • 3 tbsp Greek yoghurt
  • 1 tbsp capers
  • 20 g Parmesan shavings
  • 100 g cherry tomatoes
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 0.5 tsp Dijon mustard
  • to taste black pepper

Instructions

  1. Bring beef to room temperature, season generously.
  2. Sear in very hot pan 2.5 minutes each side for medium-rare. Rest 5 minutes.
  3. Mix horseradish, yoghurt, lemon and mustard for dressing.
  4. Arrange rocket on plates with tomatoes.
  5. Slice beef thin, lay over salad.
  6. Drizzle dressing, scatter capers and Parmesan.
