  • 200 gsalmon fillet
  • 120 mlMalbec wine
  • 80 gcremini mushrooms
  • 2 wholeshallots
  • 15 gbutter
  • 60 mlbeef stock
  • 15 mlolive oil
  • 3 gfresh thyme
  • 2 gsea salt

Ingredients

  • 200 g salmon fillet
  • 120 ml Malbec wine
  • 80 g cremini mushrooms
  • 2 whole shallots
  • 15 g butter
  • 60 ml beef stock
  • 15 ml olive oil
  • 3 g fresh thyme
  • 2 g sea salt

Instructions

  1. Pan-sear salmon skin-side down 4 min; flip 2 min; rest.
  2. Sauté shallots and mushrooms in butter 5 min.
  3. Add Malbec; reduce by half.
  4. Add stock; simmer 5 min.
  5. Finish with thyme and seasoning.
  6. Plate salmon; drizzle Malbec mushroom sauce.
