- 3 wholeeggs
- 119 mlGreek yogurt (0% fat)
- 119 mlalmond milk, unsweetened
- 5 mlbaking powder
- 5 mlvanilla extract
- 30 mlsugar-free maple syrup
- 119 mlmixed berries
- 15 mlbutter
Ingredients

- 1 cup oat flour
- 3 whole eggs
- 0.5 cup Greek yogurt (0% fat)
- 0.5 cup almond milk, unsweetened
- 1 tsp baking powder
- 1 tsp vanilla extract
- 2 tbsp sugar-free maple syrup
- 0.5 cup mixed berries
- 1 tbsp butter
Instructions
- Whisk protein powder, oat flour, and baking powder in a bowl.
- In another bowl, beat eggs, Greek yogurt, almond milk, and vanilla extract.
- Fold wet into dry ingredients until just combined — small lumps are fine.
- Heat a griddle over medium heat and melt butter.
- Pour ¼ cup batter per pancake. Cook 2–3 min until bubbles form, then flip and cook 1–2 min more.
- Stack and top with berries and sugar-free maple syrup.
