  • 341 gbreakfast pork sausage, bulk
  • 8 wholeeggs
  • 119 mlcheddar cheese, shredded
  • 0.3 wholegreen bell pepper, diced
  • 0.3 wholeonion, diced
  • 1 mlsalt
  • 1 mlblack pepper
  • 5 mlcooking spray

  • 0.75 lb breakfast pork sausage, bulk
  • 8 whole eggs
  • 0.5 cup cheddar cheese, shredded
  • 0.25 whole green bell pepper, diced
  • 0.25 whole onion, diced
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp cooking spray

Instructions

  1. Preheat oven to 375°F. Spray a 12-cup muffin tin.
  2. Brown and crumble sausage in a skillet. Drain fat. Add pepper and onion, cook 2 min.
  3. Divide sausage mixture evenly among muffin cups.
  4. Whisk eggs with salt and pepper. Pour over sausage in each cup.
  5. Top each with shredded cheddar.
  6. Bake 18–22 minutes until eggs are set and golden. Cool 5 min before removing.
