Ingredients
- 1200 gpork shoulder
- 80 gachiote paste
- 180 mlsour orange juice
- 8 clovesgarlic
- 5 gcumin
- 5 gblack pepper
- 4 unitscloves
- 3 gcinnamon
- 4 unitsbanana leaves
- 200 gred onion
- 2 unitshabanero chile
Ingredients
- 1200 g pork shoulder
- 80 g achiote paste
- 180 ml sour orange juice
- 8 cloves garlic
- 5 g cumin
- 5 g black pepper
- 4 units cloves
- 3 g cinnamon
- 4 units banana leaves
- 200 g red onion
- 2 units habanero chile
Instructions
- Blend achiote, orange juice, garlic, cumin, pepper, cloves and cinnamon into marinade.
- Score pork, coat thoroughly with marinade, refrigerate 12+ hours.
- Line baking dish with banana leaves, add pork, wrap tightly.
- Bake at 165°C for 3.5 hours.
- Shred pork in its juices.
- Make habanero-pickled onion by macerating red onion in habanero and lime.
- Serve in tortillas with pickled habanero onions.
