- 4 unitsbolillo rolls
- 400 grefried black beans
- 200 gOaxacan or Manchego cheese
- 200 gtomatoes
- 80 gwhite onion
- 2 unitsserrano chile
- 15 gcilantro
- 1 unitlime
- 20 gbutter

- 4 units bolillo rolls
- 400 g refried black beans
- 200 g Oaxacan or Manchego cheese
- 200 g tomatoes
- 80 g white onion
- 2 units serrano chile
- 15 g cilantro
- 1 unit lime
- 20 g butter
Instructions
- Cut bolillos in half lengthwise, butter cut side.
- Toast cut-side down in skillet or under broiler until golden.
- Spread warm refried beans generously on each half.
- Top with shredded cheese.
- Broil until cheese melts and bubbles.
- Make pico de gallo: dice tomato, onion, serrano, cilantro; lime dressing.
- Spoon pico de gallo over molletes and serve immediately.
