  • 200 gprotein gnocchi (or cauliflower gnocchi)
  • 150 gchicken breast
  • 2 tbspbasil pesto
  • 80 gcherry tomatoes
  • 15 gParmigiano Reggiano
  • 4 leavesfresh basil
  • 1 tspolive oil
  • 1salt and pepper

Ingredients

  • 200 g protein gnocchi (or cauliflower gnocchi)
  • 150 g chicken breast
  • 2 tbsp basil pesto
  • 80 g cherry tomatoes
  • 15 g Parmigiano Reggiano
  • 4 leaves fresh basil
  • 1 tsp olive oil
  • to taste salt and pepper

Instructions

  1. Cook gnocchi in boiling water until they float. Drain, keep 3 tbsp pasta water.
  2. Grill chicken, slice.
  3. Toss gnocchi with pesto, pasta water, and tomatoes. Top with chicken and Parmigiano.
