Ingredients
- 900 gchicken pieces
- 120 gpumpkin seeds (pepitas)
- 80 gpeanuts, unsalted
- 5 unitsguajillo chiles
- 2 unitsancho chile
- 300 gtomatoes
- 4 clovesgarlic
- 150 gonion
- 3 gcumin
- 500 mlchicken broth
- 30 mlvegetable oil
Ingredients
- 900 g chicken pieces
- 120 g pumpkin seeds (pepitas)
- 80 g peanuts, unsalted
- 5 units guajillo chiles
- 2 units ancho chile
- 300 g tomatoes
- 4 cloves garlic
- 150 g onion
- 3 g cumin
- 500 ml chicken broth
- 30 ml vegetable oil
Instructions
- Toast pepitas and peanuts in dry pan until golden.
- Toast and soak chiles, blend with tomatoes, garlic and onion.
- Blend roasted seeds and nuts with some broth until smooth.
- Combine both blended mixtures.
- Fry sauce in oil until thickened.
- Brown chicken, pour pipián sauce over.
- Simmer 25 min until chicken is cooked through.
- Serve with white rice.
