Ingredients

  • 1000 ghoneycomb tripe, cleaned
  • 600 ghominy (maíz pozolero)
  • 8 unitsguajillo chiles
  • 3 unitsancho chiles
  • 6 clovesgarlic
  • 200 gonion
  • 5 goregano
  • 3 gcumin
  • 4 unitslime
  • 4 unitsdried chile de arbol

Ingredients

  • 1000 g honeycomb tripe, cleaned
  • 600 g hominy (maíz pozolero)
  • 8 units guajillo chiles
  • 3 units ancho chiles
  • 6 cloves garlic
  • 200 g onion
  • 5 g oregano
  • 3 g cumin
  • 4 units lime
  • 4 units dried chile de arbol

Instructions

  1. Rinse tripe thoroughly, cut into pieces.
  2. Boil tripe with onion, garlic and salt in fresh water 2 hours.
  3. Toast and soak guajillo, ancho and chile de arbol chiles, blend with garlic.
  4. Add strained chile sauce to tripe broth.
  5. Add hominy, simmer 30 min.
  6. Season with oregano, cumin and salt.
  7. Serve with lime, dried oregano, diced onion and tostadas.
