Ingredients

  • 1200 gbeef tongue
  • 200 gonion
  • 8 clovesgarlic
  • 4 unitsbay leaves
  • 10 unitspeppercorns
  • 15 gsalt
  • 16 unitscorn tortillas
  • 200 mlgreen salsa
  • 80 gwhite onion
  • 20 gcilantro
  • 30 mlvegetable oil

Ingredients

  • 1200 g beef tongue
  • 200 g onion
  • 8 cloves garlic
  • 4 units bay leaves
  • 10 units peppercorns
  • 15 g salt
  • 16 units corn tortillas
  • 200 ml green salsa
  • 80 g white onion
  • 20 g cilantro
  • 30 ml vegetable oil

Instructions

  1. Cover tongue with water, add onion, garlic, bay, peppercorns and salt.
  2. Simmer 3 hours until very tender. Cool in liquid.
  3. Peel skin off tongue while warm, slice thin.
  4. Pan-fry slices in oil until edges crisp.
  5. Serve in warm tortillas with green salsa, diced onion and cilantro.
