British Spice Cabinet Shakshuka

Shakshuka with a British twist using curry powder and Worcestershire sauce. Poached eggs in spiced tomato sauce with 28g protein per serving.

Ingredients

  • 4 wholeeggs
  • 400 gtinned chopped tomatoes
  • 1 largered pepper
  • 1 mediumonion
  • 2 clovesgarlic
  • 1 tspmild curry powder
  • 1 tspsmoked paprika
  • 1 tspWorcestershire sauce
  • 1 tbspolive oil
  • 1fresh coriander
  • 2 sliceswholegrain toast

Ingredients

  • 4 whole eggs
  • 400 g tinned chopped tomatoes
  • 1 large red pepper
  • 1 medium onion
  • 2 cloves garlic
  • 1 tsp mild curry powder
  • 1 tsp smoked paprika
  • 1 tsp Worcestershire sauce
  • 1 tbsp olive oil
  • handful fresh coriander
  • 2 slices wholegrain toast

Instructions

  1. Fry onion, pepper and garlic in oil until soft, 7 minutes.
  2. Add curry powder and paprika, fry 1 minute.
  3. Add tomatoes and Worcestershire, simmer 8 minutes.
  4. Make 4 wells, crack in eggs. Cover and cook 5–7 minutes until whites just set.
  5. Scatter coriander. Serve with toast.
