High-Protein Cauliflower Cheese
Creamy British cauliflower cheese made with Greek yoghurt and extra mature Cheddar. A lighter high-protein side or main with 26g protein per serving.

Ingredients
- 1 largecauliflower
- 100 gextra mature Cheddar
- 200 gGreek yoghurt
- 150 mlskimmed milk
- 1 tbspcornflour
- 1 tspDijon mustard
- 0.5 tspsmoked paprika
- 1nutmeg
- 1salt and pepper
Ingredients
- 1 large cauliflower
- 100 g extra mature Cheddar
- 200 g Greek yoghurt
- 150 ml skimmed milk
- 1 tbsp cornflour
- 1 tsp Dijon mustard
- 0.5 tsp smoked paprika
- pinch nutmeg
- to taste salt and pepper
Instructions
- Preheat oven 200°C. Break cauliflower into florets, par-boil 5 minutes, drain.
- Whisk cornflour into cold milk, heat until thickened 3 minutes.
- Remove from heat, stir in yoghurt, 3/4 of Cheddar, mustard, paprika and nutmeg. Season.
- Toss cauliflower in sauce, pour into baking dish.
- Top with remaining Cheddar. Bake 20 minutes until bubbling and golden.
