  • 20 mlolive oil

  • 100 g cold-smoked salmon
  • 60 g crème fraîche
  • 5 g lemon zest
  • 5 g dill
  • 20 ml olive oil
  • 2 g sea salt

Instructions

  1. Grate zucchini; squeeze out moisture with cloth.
  2. Mix with eggs, flour, and salt to make batter.
  3. Fry heaped tablespoons in oil 3 min per side until golden.
  4. Mix lemon zest into crème fraîche.
  5. Serve fritters with crème fraîche, smoked salmon, and dill.
