Instructions
- Preheat oven to 190°C.
- Butterfly chicken; pound to even thickness.
- Sauté garlic and spinach until wilted; cool.
- Mix spinach with crumbled feta and chopped sun-dried tomatoes.
- Spread filling on chicken; roll up and secure with toothpicks.
- Sear in oven-safe pan 2 min per side; roast 20 min.
- Rest 5 min before slicing.
