Ingredients

  • 500 gpork tenderloin
  • 4 piecegarlic cloves
  • 30 mllime juice
  • 5 gpaprika
  • 3 gcumin
  • 7 gsalt
  • 25 mlolive oil
  • 25 gfresh parsley
  • 15 gfresh cilantro
  • 20 mlred wine vinegar
  • 2 gchili flakes

Ingredients

  • 500 g pork tenderloin
  • 4 piece garlic cloves
  • 30 ml lime juice
  • 5 g paprika
  • 3 g cumin
  • 7 g salt
  • 25 ml olive oil
  • 25 g fresh parsley
  • 15 g fresh cilantro
  • 20 ml red wine vinegar
  • 2 g chili flakes

Instructions

  1. Marinate pork in garlic, lime, paprika, cumin, salt, and half the olive oil for 1 hour.
  2. Grill pork over medium-high heat, turning, for 18-22 minutes until internal temp is 63°C.
  3. Rest 5 minutes before slicing.
  4. Blend parsley, cilantro, vinegar, remaining olive oil, chili, and salt for chimichurri.
  5. Slice pork and serve drizzled with chimichurri.
