- 350 gmasa harina
- 300 mlwarm water
- 200 gpork chicharrón
- 400 gtomatillos
- 3 unitsserrano chiles
- 3 clovesgarlic
- 100 gonion
- 15 gcilantro
- 30 mllard or oil
- 60 gCotija cheese

- 350 g masa harina
- 300 ml warm water
- 200 g pork chicharrón
- 400 g tomatillos
- 3 units serrano chiles
- 3 cloves garlic
- 100 g onion
- 15 g cilantro
- 30 ml lard or oil
- 60 g Cotija cheese
Instructions
- Mix masa with water and salt to form soft dough.
- Form thick oval patties, cook on comal until dry.
- Boil tomatillos, serranos and garlic; blend with onion and cilantro.
- Fry salsa verde in lard until thickened.
- Break chicharrón into pieces, simmer in salsa 5 min.
- Split gorditas down the side, stuff with chicharrón in salsa.
- Top with Cotija and serve.
