- 4 unitscorn tortillas
- 400 gtomatoes
- 3 unitsserrano chiles
- 3 clovesgarlic
- 100 gonion
- 400 gcanned black beans
- 40 mlvegetable oil
- 15 gcilantro
- 60 mlMexican cream
Ingredients
- 8 units eggs
- 4 units corn tortillas
- 400 g tomatoes
- 3 units serrano chiles
- 3 cloves garlic
- 100 g onion
- 400 g canned black beans
- 40 ml vegetable oil
- 15 g cilantro
- 60 ml Mexican cream
Instructions
- Blend tomatoes, serrano, garlic and onion.
- Fry sauce in oil until darkened and reduced, about 15 min.
- Heat beans with a pinch of cumin and salt.
- Fry tortillas in oil until crispy.
- Fry eggs sunny-side up.
- Place eggs on tortillas, top with ranchero sauce, beans and cream.
