Ingredients

  • 8 unitseggs
  • 4 unitscorn tortillas
  • 400 gtomatoes
  • 3 unitsserrano chiles
  • 3 clovesgarlic
  • 100 gonion
  • 400 gcanned black beans
  • 40 mlvegetable oil
  • 15 gcilantro
  • 60 mlMexican cream

Ingredients

  • 8 units eggs
  • 4 units corn tortillas
  • 400 g tomatoes
  • 3 units serrano chiles
  • 3 cloves garlic
  • 100 g onion
  • 400 g canned black beans
  • 40 ml vegetable oil
  • 15 g cilantro
  • 60 ml Mexican cream

Instructions

  1. Blend tomatoes, serrano, garlic and onion.
  2. Fry sauce in oil until darkened and reduced, about 15 min.
  3. Heat beans with a pinch of cumin and salt.
  4. Fry tortillas in oil until crispy.
  5. Fry eggs sunny-side up.
  6. Place eggs on tortillas, top with ranchero sauce, beans and cream.
