Ingredients
- 4 wholeeggs
- 400 gtinned chopped tomatoes
- 1 largered pepper
- 1 mediumonion
- 2 clovesgarlic
- 1 tspmild curry powder
- 1 tspsmoked paprika
- 1 tspWorcestershire sauce
- 1 tbspolive oil
- 1fresh coriander
- 2 sliceswholegrain toast
Ingredients
- 4 whole eggs
- 400 g tinned chopped tomatoes
- 1 large red pepper
- 1 medium onion
- 2 cloves garlic
- 1 tsp mild curry powder
- 1 tsp smoked paprika
- 1 tsp Worcestershire sauce
- 1 tbsp olive oil
- handful fresh coriander
- 2 slices wholegrain toast
Instructions
- Fry onion, pepper and garlic in oil until soft, 7 minutes.
- Add curry powder and paprika, fry 1 minute.
- Add tomatoes and Worcestershire, simmer 8 minutes.
- Make 4 wells, crack in eggs. Cover and cook 5–7 minutes until whites just set.
- Scatter coriander. Serve with toast.
