- 400 gchicken breast
- 2 headsromaine lettuce
- 40 gParmesan
- 2 sliceswholegrain bread
- 80 gGreek yoghurt
- 3 filletsanchovies
- 1 clovegarlic
- 2 tbsplemon juice
- 1 tspDijon mustard
- 1 tspWorcestershire sauce
- 1 tbspolive oil
Ingredients
- 400 g chicken breast
- 2 heads romaine lettuce
- 40 g Parmesan
- 2 slices wholegrain bread
- 80 g Greek yoghurt
- 3 fillets anchovies
- 1 clove garlic
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 tbsp olive oil
Instructions
- Cube bread, toss with oil, bake at 180°C for 10 minutes for croutons.
- Blitz yoghurt, anchovy, garlic, lemon, mustard, Worcestershire for dressing.
- Season chicken, grill 5 minutes each side until cooked through. Slice.
- Chop romaine, toss with dressing.
- Top with chicken, croutons and Parmesan shavings.
