High-Protein Roast Chicken Traybake

One-pan roast chicken thighs with sweet potatoes, broccoli and garlic. A British weeknight dinner with 48g protein and minimal washing up, ready in 60 minutes.

Ingredients

  • 800 gbone-in chicken thighs
  • 400 gsweet potato
  • 200 gtenderstem broccoli
  • 1 wholegarlic bulb
  • 1 wholelemon
  • 3 sprigsfresh rosemary
  • 2 tbspolive oil
  • 1 tspsmoked paprika
  • 1salt and pepper

Ingredients

  • 800 g bone-in chicken thighs
  • 400 g sweet potato
  • 200 g tenderstem broccoli
  • 1 whole garlic bulb
  • 1 whole lemon
  • 3 sprigs fresh rosemary
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • to taste salt and pepper

Instructions

  1. Preheat oven 200°C. Cube sweet potato, toss with 1 tbsp oil and seasoning.
  2. Place in roasting tray. Add halved garlic bulb and lemon, rosemary.
  3. Rub chicken with remaining oil, paprika, salt and pepper. Nestle on top.
  4. Roast 30 minutes, then add broccoli. Roast further 15 minutes.
  5. Rest 5 minutes. Squeeze roasted garlic and lemon juice over to serve.
