- 10 gbutter
- 2 gsea salt

- 100 g sliced ham
- 200 g potatoes
- 40 ml sunflower oil
- 10 g butter
- 2 g sea salt
- 5 g parsley chopped
Instructions
- Julienne potatoes into thin straws; fry in oil until crispy; drain.
- Shred ham into strips.
- Melt butter in pan; add ham and crispy potatoes.
- Beat eggs with salt; pour over mixture.
- Fold gently over low heat until just set.
- Garnish with chopped parsley.
