- 250 ggrass-fed sirloin steak
- 15 gbush tomatoes dried
- 1 wholebrown onion
- 10 gbrown sugar
- 15 mlred wine vinegar
- 15 mlolive oil
- 2 gsea salt
- 2 gcracked pepper

- 15 g bush tomatoes dried
- 1 whole brown onion
- 10 g brown sugar
- 15 ml red wine vinegar
- 15 ml olive oil
- 2 g sea salt
- 2 g cracked pepper
Instructions
- Rehydrate bush tomatoes in warm water 10 min; roughly chop.
- Caramelise onion in olive oil over low heat 20 min; add bush tomatoes, sugar, and vinegar; simmer 10 min.
- Season sirloin with salt and pepper.
- Grill on high 3–4 min per side for medium-rare.
- Rest 5 min; top with chutney.
