  • 4 medium sweet potatoes
  • 1.5 lb ground turkey (93% lean)
  • 0.25 cup BBQ sauce (low-sugar)
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.25 cup Greek yogurt (plain)
  • 3 whole green onion, sliced
  • 0.5 tsp black pepper and salt

Instructions

  1. Preheat oven to 400°F. Prick sweet potatoes with a fork and bake 45–50 minutes.
  2. Brown ground turkey in a skillet with garlic powder, paprika, salt, and pepper.
  3. Stir in BBQ sauce and simmer 2 minutes.
  4. Slice open baked sweet potatoes and fluff the inside.
  5. Stuff generously with BBQ turkey mixture.
  6. Top with Greek yogurt and green onion.
