A Bahian specialty — a thick, golden paste of bread, coconut milk, peanuts, and shrimp. Served as a sauce or filling. Incredibly rich flavor on a shoestring budget.

Ingredients

  • 150 gstale bread
  • 150 gshrimp (dried or fresh)
  • 200 mlcoconut milk
  • 60 groasted peanuts
  • 20 mldendê oil
  • 1 mediumonion
  • 2 piecegarlic cloves
  • 5 gginger
  • 4 gsalt
  • 10 gcilantro

Ingredients

  • 150 g stale bread
  • 150 g shrimp (dried or fresh)
  • 200 ml coconut milk
  • 60 g roasted peanuts
  • 20 ml dendê oil
  • 1 medium onion
  • 2 piece garlic cloves
  • 5 g ginger
  • 4 g salt
  • 10 g cilantro

Instructions

  1. Soak bread in coconut milk for 10 minutes. Squeeze and reserve liquid.
  2. Blend soaked bread, peanuts, shrimp, onion, garlic, and ginger with reserved milk into a smooth paste.
  3. Heat dendê oil in a pan over medium heat. Add paste and stir constantly.
  4. Cook 15-20 minutes until thick and golden, adding more coconut milk as needed.
  5. Season and serve topped with cilantro as a sauce with rice or acarajé.
