- 3 whole ripe bananas, mashed
- 2 scoop vanilla whey protein powder
- 1.5 cup oat flour
- 2 whole eggs
- 0.5 cup Greek yogurt (plain)
- 2 tbsp honey
- 1.5 tsp baking powder
- 0.5 tsp cinnamon
- 1 tsp vanilla extract
- 0.25 cup dark chocolate chips (optional)
Instructions
- Preheat oven to 350°F. Line a 12-cup muffin tin.
- Mash bananas in a large bowl. Add eggs, Greek yogurt, honey, and vanilla. Mix well.
- In another bowl, whisk protein powder, oat flour, baking powder, and cinnamon.
- Fold dry into wet until just combined. Fold in chocolate chips if using.
- Divide batter evenly among 12 muffin cups.
- Bake 20–22 minutes until a toothpick comes out clean. Cool before removing.
