  • eggs
  • Mexican chorizo
  • cauliflower rice
  • cheddar cheese, shredded
  • sour cream
  • salsa (no-sugar)
  • avocado, diced
  • cumin
  • chili powder
  • salt

Ingredients

  • 4 whole eggs
  • 4 oz Mexican chorizo
  • 2 cup cauliflower rice
  • 0.5 cup cheddar cheese, shredded
  • 2 tbsp sour cream
  • 3 tbsp salsa (no-sugar)
  • 0.5 whole avocado, diced
  • 0.5 tsp cumin
  • 0.5 tsp chili powder
  • 0.5 tsp salt

Instructions

  1. Cook chorizo in a skillet over medium heat, breaking into crumbles, 5–6 minutes.
  2. Remove chorizo; in same pan sauté cauliflower rice with cumin, chili powder, and salt for 4 minutes.
  3. Scramble eggs in a separate pan to your liking.
  4. Layer into bowls: cauliflower rice, eggs, chorizo.
  5. Top with cheddar, sour cream, salsa, and avocado.
