Ingredients
- 1 cupsall-purpose flour (maida)
- 1 mediumpotatoes, boiled and mashed
- 1 cupgreen peas, cooked
- 1 tspcumin seeds
- 1 wholegreen chili, minced
- 1 tspginger, grated
- 1 tspamchur powder
- 1 tspgaram masala
- 1 cupsoil for dough + deep frying
- 1 tspsalt

- 2 cups all-purpose flour (maida)
- 3 medium potatoes, boiled and mashed
- 0.5 cup green peas, cooked
- 1 tsp cumin seeds
- 2 whole green chili, minced
- 1 tsp ginger, grated
- 0.5 tsp amchur powder
- 0.5 tsp garam masala
- 3 cups oil for dough + deep frying
- 1.25 tsp salt
Instructions
- Rub 3 tbsp oil into maida with salt; add water gradually to make a stiff, smooth dough; rest 20 minutes.
- For filling: heat 1 tbsp oil; add cumin, chili, ginger, potatoes, peas, amchur, garam masala, salt; toss.
- Divide dough into balls; roll into ovals; cut in half and shape into cones.
- Fill each cone with potato mixture; seal edges with a dab of water.
- Deep-fry in medium-hot oil (160°C) for 8–10 minutes until deep golden and crisp.
- Serve hot with green chutney and tamarind chutney.
