Vada Pav (Mumbai Spicy Potato Burger)

Ingredients

  • 1 mediumpotatoes, boiled and mashed
  • 1 rollspav (bread rolls)
  • 1 cupchickpea flour (besan)
  • 1 tspmustard seeds
  • 1 leavescurry leaves
  • 1 tbspgreen chili-ginger paste
  • 1 tspturmeric
  • 1 tbspdry garlic chutney (lehsun chutney)
  • 1 cupsoil for deep frying
  • 1 tspsalt

Ingredients

  • 4 medium potatoes, boiled and mashed
  • 4 rolls pav (bread rolls)
  • 0.75 cup chickpea flour (besan)
  • 0.5 tsp mustard seeds
  • 8 leaves curry leaves
  • 1 tbsp green chili-ginger paste
  • 0.5 tsp turmeric
  • 4 tbsp dry garlic chutney (lehsun chutney)
  • 2 cups oil for deep frying
  • 1 tsp salt

Instructions

  1. Heat 1 tbsp oil; add mustard seeds, curry leaves, and chili-ginger paste; sizzle.
  2. Add mashed potatoes, turmeric, and salt; mix well. Shape into golf-ball-sized vadas.
  3. Whisk besan with turmeric, salt, and water to a thick batter.
  4. Dip each vada into batter; deep-fry in hot oil until golden and crisp, 3–4 minutes.
  5. Toast pav rolls on a buttered tawa until golden.
  6. Spread dry garlic chutney and green chutney on pav; place hot vada inside.
  7. Press together and serve immediately.
