- 1200 gturkey pieces
- 5 unitschihuacle negro chiles
- 4 unitsmulato chiles
- 3 unitspasilla chiles
- 60 gdark chocolate
- 300 gtomatoes
- 200 gtomatillos
- 6 clovesgarlic
- 200 gonion
- 40 gsesame seeds
- 40 gpumpkin seeds
- 800 mlturkey or chicken broth
- 40 glard
Ingredients
- 1200 g turkey pieces
- 5 units chihuacle negro chiles
- 4 units mulato chiles
- 3 units pasilla chiles
- 60 g dark chocolate
- 300 g tomatoes
- 200 g tomatillos
- 6 cloves garlic
- 200 g onion
- 40 g sesame seeds
- 40 g pumpkin seeds
- 800 ml turkey or chicken broth
- 40 g lard
Instructions
- Toast, char slightly and soak all chiles.
- Fry tomatoes, tomatillos, onion, garlic, sesame and pumpkin seeds.
- Blend everything in batches with broth.
- Fry blended mole in lard until very dark and thick, stirring constantly.
- Add chocolate and enough broth to consistency.
- Simmer turkey in mole 30 min.
- Serve with white rice and sesame garnish.
