London-Style Chicken Satay Skewers

Ingredients

  • 500 gchicken breast
  • 3 tbsppeanut butter
  • 100 mlcoconut milk
  • 2 tbspsoy sauce
  • 2 tbsplime juice
  • 2 clovesgarlic
  • 1 cmginger
  • 0.5 tspchilli flakes
  • 1 tsphoney
  • 1 tspsesame oil
  • 1fresh coriander

Ingredients

  • 500 g chicken breast
  • 3 tbsp peanut butter
  • 100 ml coconut milk
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 cloves garlic
  • 1 cm ginger
  • 0.5 tsp chilli flakes
  • 1 tsp honey
  • 1 tsp sesame oil
  • handful fresh coriander

Instructions

  1. Blend half the peanut butter, soy sauce, lime, garlic, ginger, chilli, honey and sesame for marinade.
  2. Cube chicken, coat in marinade, thread on skewers. Rest 10 minutes.
  3. Grill 5–6 minutes each side until charred.
  4. Warm remaining peanut butter with coconut milk and remaining sauce ingredients for dipping sauce.
  5. Serve skewers with dipping sauce and coriander.
