- 120 gsmoked salmon
- 150 gcooked quinoa
- 80 gedamame
- 0.5 piececucumber
- 1 tbsppickled ginger
- 1fresh dill
- 2 tbsplemon juice
- 1 tbspolive oil
- 1 tspsesame seeds
- 2 stalksspring onion
Ingredients
- 120 g smoked salmon
- 150 g cooked quinoa
- 80 g edamame
- 0.5 piece cucumber
- 1 tbsp pickled ginger
- small bunch fresh dill
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp sesame seeds
- 2 stalks spring onion
Instructions
- Cook quinoa if needed, cool.
- Use a peeler to create cucumber ribbons.
- Whisk lemon juice and olive oil for dressing.
- Layer quinoa in a bowl, top with edamame, cucumber, smoked salmon, ginger.
- Drizzle dressing, scatter dill, spring onion and sesame seeds.
