  • 4 wholeeggs
  • 100 gchorizo
  • 80 groasted red capsicum
  • 200 gcanned diced tomatoes
  • 2 wholegarlic cloves
  • 2 gcumin
  • 10 mlolive oil
  • 10 gflat-leaf parsley

  • 100 g chorizo
  • 80 g roasted red capsicum
  • 200 g canned diced tomatoes
  • 2 whole garlic cloves
  • 2 g cumin
  • 10 ml olive oil
  • 10 g flat-leaf parsley

Instructions

  1. Slice chorizo and brown in cast iron skillet over campfire.
  2. Add garlic and cumin; stir 1 min.
  3. Add tomatoes and capsicum; simmer 5 min.
  4. Make 4 wells; crack an egg in each.
  5. Cover with lid or foil; cook 6–8 min until whites set.
  6. Scatter parsley and serve in the pan.
