- 4 wholeeggs
- 113 gMexican chorizo
- 474 mlcauliflower rice
- 119 mlcheddar cheese, shredded
- 30 mlsour cream
- 45 mlsalsa (no-sugar)
- 0.5 wholeavocado, diced
- 3 mlcumin
- 3 mlchili powder
- 3 mlsalt
Ingredients
- 4 whole eggs
- 4 oz Mexican chorizo
- 2 cup cauliflower rice
- 0.5 cup cheddar cheese, shredded
- 2 tbsp sour cream
- 3 tbsp salsa (no-sugar)
- 0.5 whole avocado, diced
- 0.5 tsp cumin
- 0.5 tsp chili powder
- 0.5 tsp salt
Instructions
- Cook chorizo in a skillet over medium heat, breaking into crumbles, 5–6 minutes.
- Remove chorizo; in same pan sauté cauliflower rice with cumin, chili powder, and salt for 4 minutes.
- Scramble eggs in a separate pan to your liking.
- Layer into bowls: cauliflower rice, eggs, chorizo.
- Top with cheddar, sour cream, salsa, and avocado.
