  • 8 unitspoblano chiles
  • 600 gground beef
  • 400 gtomatoes
  • 150 gonion
  • 3 clovesgarlic
  • 50 graisins
  • 50 galmonds
  • 100 gwalnuts
  • 200 mlMexican cream
  • 3 unitseggs
  • 50 gflour

Ingredients

  • 8 units poblano chiles
  • 600 g ground beef
  • 400 g tomatoes
  • 150 g onion
  • 3 cloves garlic
  • 50 g raisins
  • 50 g almonds
  • 100 g walnuts
  • 200 ml Mexican cream
  • 3 units eggs
  • 50 g flour

Instructions

  1. Roast poblanos directly on flame, sweat in bag 10 min, peel and make slit to remove seeds.
  2. Brown beef with onion, garlic, tomato, raisins and almonds.
  3. Stuff chiles carefully with meat filling.
  4. Beat egg whites stiff, fold in yolks and flour.
  5. Dip stuffed chiles in batter, fry until golden.
  6. Blend walnuts with cream and salt for nogada sauce.
  7. Serve chiles topped with nogada sauce.
