Post-Gym Tuna Niçoise Salad

Ingredients
- 300 gfresh tuna steak
- 3 wholeeggs
- 150 gFrench beans
- 100 gcherry tomatoes
- 50 gblack olives
- 2 headsgem lettuce
- 1 tspDijon mustard
- 2 tbspred wine vinegar
- 3 tbspolive oil
- 1 tbspcapers
- 1salt and pepper
Ingredients
- 300 g fresh tuna steak
- 3 whole eggs
- 150 g French beans
- 100 g cherry tomatoes
- 50 g black olives
- 2 heads gem lettuce
- 1 tsp Dijon mustard
- 2 tbsp red wine vinegar
- 3 tbsp olive oil
- 1 tbsp capers
- to taste salt and pepper
Instructions
- Boil eggs 7 minutes, cool and halve. Blanch beans 3 minutes.
- Whisk mustard, vinegar and oil for dressing.
- Season tuna, sear in hot pan 90 seconds each side. Rest, slice thick.
- Arrange lettuce, beans, tomatoes, olives and eggs on plates.
- Top with tuna slices, capers and dressing.
