- 20 mlred wine vinegar
- 20 mlolive oil
- 10 gparsley
- 3 gcoarse salt

- 2 whole tomatoes
- 1 whole white onion
- 0.5 whole red capsicum
- 20 ml red wine vinegar
- 20 ml olive oil
- 10 g parsley
- 3 g coarse salt
Instructions
- Season ribs with coarse salt only.
- Grill over medium-high heat 6–8 min per side.
- Dice tomatoes, onion, and capsicum into small cubes.
- Dress with vinegar, olive oil, and parsley.
- Serve ribs with salsa criolla on the side.
