  • 2 wholetomatoes
  • 1 wholewhite onion
  • 0.5 wholered capsicum
  • 20 mlred wine vinegar
  • 20 mlolive oil
  • 10 gparsley
  • 3 gcoarse salt

  • 2 whole tomatoes
  • 1 whole white onion
  • 0.5 whole red capsicum
  • 20 ml red wine vinegar
  • 20 ml olive oil
  • 10 g parsley
  • 3 g coarse salt

Instructions

  1. Season ribs with coarse salt only.
  2. Grill over medium-high heat 6–8 min per side.
  3. Dice tomatoes, onion, and capsicum into small cubes.
  4. Dress with vinegar, olive oil, and parsley.
  5. Serve ribs with salsa criolla on the side.
