Ingredients

  • 800 gbeef marrow bones
  • 600 gbeef shank
  • 2 unitscorn cobs
  • 2 unitszucchini
  • 1 unitchayote
  • 2 unitscarrots
  • 200 gcabbage
  • 150 gonion
  • 5 clovesgarlic
  • 20 gcilantro
  • 5 gmint

Ingredients

  • 800 g beef marrow bones
  • 600 g beef shank
  • 2 units corn cobs
  • 2 units zucchini
  • 1 unit chayote
  • 2 units carrots
  • 200 g cabbage
  • 150 g onion
  • 5 cloves garlic
  • 20 g cilantro
  • 5 g mint

Instructions

  1. Blanch bones and shank in boiling water 5 min, drain and rinse.
  2. Cover bones and shank with fresh water, add onion and garlic, boil 2 hours, skimming.
  3. Add corn, carrots and chayote, cook 20 min.
  4. Add zucchini and cabbage, cook another 10 min.
  5. Season with salt, add cilantro and mint.
  6. Serve with lime, serrano and warm tortillas.
