  • 300 gpork loin butterflied
  • 4 wholegarlic cloves
  • 3 gcumin
  • 2 gpaprika
  • 20 mlolive oil
  • 2 wholetomatoes diced
  • 0.5 wholered onion diced
  • 10 gparsley
  • 15 mlred wine vinegar

Ingredients

  • 300 g pork loin butterflied
  • 4 whole garlic cloves
  • 3 g cumin
  • 2 g paprika
  • 20 ml olive oil
  • 2 whole tomatoes diced
  • 0.5 whole red onion diced
  • 10 g parsley
  • 15 ml red wine vinegar

Instructions

  1. Marinate pork with garlic, cumin, paprika, and olive oil 30 min.
  2. Grill butterflied pork 6–8 min per side.
  3. Mix diced tomatoes, onion, parsley, vinegar, and oil for criolla.
  4. Rest pork 5 min; slice.
  5. Serve with criolla salsa.
