- 681 gchicken breast
- 356 mlwhite rice, uncooked
- 711 mlbroccoli florets
- 30 mlolive oil
- 5 mlgarlic powder
- 3 mlonion powder
- 5 mldried oregano
- 3 mlpaprika
- 5 mlsalt
- 1 wholelemon, juiced
Ingredients
- 1.5 lb chicken breast
- 1.5 cup white rice, uncooked
- 3 cup broccoli florets
- 2 tbsp olive oil
- 1 tsp garlic powder
- 0.5 tsp onion powder
- 1 tsp dried oregano
- 0.5 tsp paprika
- 1 tsp salt
- 1 whole lemon, juiced
Instructions
- Cook rice per package directions.
- Mix olive oil, garlic powder, onion powder, oregano, paprika, salt, and lemon juice.
- Coat chicken breasts in the marinade.
- Grill or pan-cook chicken 6–7 min per side until 165°F internal. Rest 5 min, slice.
- Steam broccoli 4–5 minutes until bright green and tender-crisp.
- Portion into 4 containers: equal parts rice, chicken, and broccoli.
