  • button mushrooms
  • white wine
  • cream
  • garlic cloves
  • butter
  • olive oil
  • sea salt
  • parsley

Ingredients

  • 250 g beef tenderloin medallions
  • 120 g button mushrooms
  • 80 ml white wine
  • 60 ml cream
  • 2 whole garlic cloves
  • 20 g butter
  • 10 ml olive oil
  • 2 g sea salt
  • 5 g parsley

Instructions

  1. Sear medallions in oil 2 min per side; rest.
  2. Sauté garlic and mushrooms in butter 5 min.
  3. Add wine; reduce by half.
  4. Add cream; simmer 3 min until slightly thickened.
  5. Return medallions; coat in sauce.
  6. Garnish with parsley.
