  • lemon
  • coarse salt
  • black pepper
  • olive oil
  • chimichurri

Ingredients

  • 300 g veal sweetbreads
  • 2 whole lemon
  • 3 g coarse salt
  • 2 g black pepper
  • 15 ml olive oil
  • 50 ml chimichurri

Instructions

  1. Soak sweetbreads in cold water 2 hours; blanch 5 min; peel membrane.
  2. Season with salt, pepper, and olive oil.
  3. Grill on medium heat 15–20 min turning until crispy on all sides.
  4. Squeeze lemon over them.
  5. Serve with chimichurri.
