- 220 g Patagonian rainbow trout fillet
- 5 g fresh dill
- 5 g fresh parsley
- 20 ml lemon juice
- 25 ml olive oil
- 1 whole garlic clove
- 2 g sea salt
- 1 g black pepper
Instructions
- Blend herbs, lemon juice, and olive oil for herb oil.
- Season trout with salt and pepper.
- Pan-sear skin-side down in hot oil 4 min.
- Flip; cook 2 min.
- Rest 2 min; drizzle herb oil generously.
- Serve with roasted vegetables or salad.
