  • 100 g sliced ham
  • 200 g potatoes
  • 40 ml sunflower oil
  • 10 g butter
  • 2 g sea salt
  • 5 g parsley chopped

Instructions

  1. Julienne potatoes into thin straws; fry in oil until crispy; drain.
  2. Shred ham into strips.
  3. Melt butter in pan; add ham and crispy potatoes.
  4. Beat eggs with salt; pour over mixture.
  5. Fold gently over low heat until just set.
  6. Garnish with chopped parsley.
