- 3 whole eggs
- 150 g ricotta
- 100 g cooked ham
- 40 g Parmesan grated
- 30 g butter
- 8 whole fresh sage leaves
- 2 g sea salt
Instructions
- Make pasta dough with flour and eggs; rest 30 min.
- Mix ricotta, diced ham, and Parmesan for filling.
- Roll dough thin; cut circles; fill and seal into rounds.
- Cook in boiling salted water 4 min.
- Brown butter with sage until nutty.
- Toss sorrentinos in sage butter; serve with extra Parmesan.
