- kaffir lime leaves
- red chilli
- fish sauce
- lime juice
- fresh coriander
Ingredients
- 200 g barramundi fillet
- 1 sheet banana leaf
- 1 whole lemongrass stalk
- 3 whole kaffir lime leaves
- 1 whole red chilli
- 10 ml fish sauce
- 15 ml lime juice
- 10 g fresh coriander
Instructions
- Bruise lemongrass; thinly slice chilli.
- Place banana leaf on work surface; lay barramundi on leaf.
- Top with lemongrass, kaffir lime, chilli, fish sauce, and lime.
- Fold leaf to enclose; secure with toothpick.
- Steam for 12–15 min.
- Open at table; garnish with coriander.
