  • white fish fillets (snapper or tilapia)
  • banana leaves (fresh or frozen)
  • coconut milk
  • garlic cloves
  • lime juice
  • cilantro
  • green onion
  • salt
  • chili (fresh)
  • olive oil

Ingredients

  • 500 g white fish fillets (snapper or tilapia)
  • 2 piece banana leaves (fresh or frozen)
  • 100 ml coconut milk
  • 3 piece garlic cloves
  • 25 ml lime juice
  • 20 g cilantro
  • 15 g green onion
  • 5 g salt
  • 1 piece chili (fresh)
  • 10 ml olive oil

Instructions

  1. Pass banana leaves briefly over a flame to soften them.
  2. Mix coconut milk, lime juice, garlic, cilantro, salt, and olive oil into a marinade.
  3. Coat fish fillets in marinade. Place on banana leaves with fresh chili and green onion.
  4. Wrap tightly and secure with kitchen string or toothpicks.
  5. Grill or bake at 200°C for 20-25 minutes. Unwrap and serve in the leaf.
