Ingredients

  • 4 wholebell peppers (any color)
  • 1.5 lbchicken breast, cooked and shredded
  • 0.3 cupbuffalo sauce
  • 4 ozcream cheese, softened
  • 0.3 cupblue cheese crumbles
  • 2 stalkscelery, diced
  • 3 wholegreen onion
  • 0.5 tspgarlic powder
  • 2 tbspranch dressing (light)

Ingredients

  • 4 whole bell peppers (any color)
  • 1.5 lb chicken breast, cooked and shredded
  • 0.33 cup buffalo sauce
  • 4 oz cream cheese, softened
  • 0.25 cup blue cheese crumbles
  • 2 stalks celery, diced
  • 3 whole green onion
  • 0.5 tsp garlic powder
  • 2 tbsp ranch dressing (light)

Instructions

  1. Preheat oven to 400°F.
  2. Slice peppers in half lengthwise, remove seeds and membranes.
  3. Mix shredded chicken with buffalo sauce, cream cheese, celery, garlic powder, and half the green onion.
  4. Stuff each pepper half generously with the buffalo chicken mixture.
  5. Top with blue cheese crumbles.
  6. Bake 25–30 minutes until peppers are tender and tops are golden.
  7. Drizzle with ranch and remaining green onion to serve.
