  • chana dal, soaked
  • fennel seeds
  • cumin seeds
  • green chili, minced
  • ginger, grated
  • turmeric
  • oil for dough + frying
  • salt

  • 2 cups whole wheat flour (atta)
  • 0.5 cup chana dal, soaked
  • 0.5 tsp fennel seeds
  • 0.5 tsp cumin seeds
  • 1 whole green chili, minced
  • 0.5 tsp ginger, grated
  • 0.25 tsp turmeric
  • 2 cups oil for dough + frying
  • 1 tsp salt

Instructions

  1. Grind soaked chana dal coarsely with green chili, ginger, fennel, cumin, turmeric, and salt (no water).
  2. Knead atta with 1 tbsp oil, salt, and water into a soft, pliable dough.
  3. Divide dough into balls; flatten, add a spoon of dal mixture, seal, and re-roll into a small disc.
  4. Deep-fry in hot oil (175°C) 2–3 minutes until puffed and golden.
  5. Drain on paper; serve hot with sabzi, chokha, or aloo curry.
